2007 Cooking Class schedule
Join Oliver and company for their 16th season of cooking classes. Chef Oliver is truly innovative and inspirational for home cooks as he shows everyone how to cook better and enables participants to leave with a better understanding of modern culinary principles plus the “how to’s” of simplifying home entertaining.
For those who have not attended a class, we set the room for 5:00 PM and hold an open forum culinary demonstration. Oliver is joined by chef Shaun Foley and expert wine sommelier Andrew Lampasone (of the Wine watch) providing valuable information on food & wine pairings and other interesting winery particulars. Each class is then followed by a sit down dinner and wine tasting, sampling the foods we’ve just prepared (it’s really more like “Eater-Tainment). This year will be extra special as the classes will be taped for a 12 episode local TV show which will air over the next year. (Class space is limited; tuition is $65 dollars plus tax & tip)
January 11th
Pasta! Pasta! Pasta! (To air in April)
Discover the pastabilities as Shaun and Oliver make ravioli and fresh made pasta from scratch. We will look into the differences of using fresh vs. dry pasta and we shop for common Italian & Mediterranean ingredients. Also, be our guest as we take a trip through Italian wine country.

April 12th
Thai cooking (To air in May)
“Thai one on” with Asian delights as we tour the Pacific Rim exploring and demystifying ingredients from that region. We examine the cooking methods and tools used in Thai cooking and Andrew will explain how to pair wine with the unique
and sometimes spicy cuisine.

May 10th
Fearless fish & shellfish cookery (To air in June)
Fear no fish from the sea! Oliver shares his expertise on how to select, purchase and store seafood. We also answer the age old question of “how do I know when it’s done?” At the bar with Andrew focuses on California chardonnay’s which are a natural when paired with seafood.

We are going to the beach! Come party with us as we learn about island cuisines that have made South Florida famous. We take a closer look at regional seafood and components that make our regional cooking unique.

Lobster! All about Lobsters! (To air in August)
Join us for a tail of the claw as we delve into the secrets of lobster “Nature’s real Other White Meat”. Oliver & Shaun review many aspects of Florida vs. Maine lobster to include how to buy, when to buy and how to skillfully cook lobster.
